summer recipe: salsa #1

I love tomato season. I love it mainly because I consider salsa an essential food group in my diet. Aside from the usual tortilla chips, I use it on eggs or with roasted zucchini or as a dip for fried squash blossoms… mmmm!

I tend to improvise the recipe based on what looks good at the market; so, here is my first salsa of the – soon to be! – summer season:

2 medium heirloom tomatoes
1 green jalapeno
1 sweet onion
6 garlic cloves
1 juiced lime or lemon
1/2 bunch parsley
1/2 bunch cilantro
2 tbsp apple cider vinegar
salt to taste

Roughly chop the tomatoes, jalapeno, onion, cilantro, and parsley. Put everything in a blender and blend to desired texture. Enjoy!
